The organically made wines from this Mendocino winery were just the thing to compliment the great cuisine from Cantalini’s culinary team. A full house of guest enjoyed 5 different wines and left very happy!
Most popular wine of the evening was the 2018 Chardonnay. This wine had just a hint of oak which allowed the fruit and full flavors to come forward and work well with the food.
Wine and Food Pairing highlights
The best pairing of the night was a tough call but went to the 2016 Merlot paired with Cantalini’s signature Pappardelle Bolognese. The smoothness and texture of the wine was a mirror of the freshly made pasta. But then, tasting the not-too-rich Bolognese sauce made with ground veal and pork with the Merlot flavors was just short of amazing. Were you drinking the sauce and eating the wine, or…. Overall, Chef Maria did a fine job pairing these food-friendly wines with this down-home Italian cuisine.
